ENGLISH MATERIALS TAUGHT IN CULINARY ART DEPARTMENT

ABSTRACT
ESP plays an important role to be implemented for students in specific majors, one
of which is in the hospitality sector including culinary art. This research aims to
investigate the English materials taught in the culinary art department and see the
alignment between the materials and the principles of ESP materials proposed by
Hutchinson and Waters (1987). The research was conducted at one of culinary
institutes in Bogor. The participants in this research included subject participants
consisting of the English lecturer. Meanwhile, for the object participant, the writer
takes the English textbook entitled “English for Tourism”. In conducting the
research, the writer uses a qualitative approach. To gain the research data, the writer
collected documentation and conducted interviews. The results of this study show
that there are two English materials taught in culinary art department, including the
speaking and writing lessons which have aligned with principles of ESP materials.
The principles are providing a stimulus for learning, helping the teacher to organize
the teaching and learning process, embody a view of the nature of language
learning, reflect the nature of the learning task, broadening the teacher’s knowledge,
and provide models of correct and appropriate language use. However, the results
from the research also show that the textbook is lesson-based textbook. It shows
that the textbook is inappropriate in the awareness of needs since the textbook has
not carried out the input and reflection section yet.
